CUTE PAW COOKIES RECIPE
These cookies are soft, buttery and sweet with a hint of almond and orange, dipped in three different types of chocolate and decorated with a little bit of soft pink chocolate to look like cute paws. They are made with marzipan and freshly squeezed orange juice that gives them the perfect melt-in-your-mouth cookie consistency.
I decorated these cute paw cookies with white, milk, and dark chocolate and used some freeze-dried beet powder and white chocolate for the paw prints using a piping bag fitted with a small plain tip. I’ve made these paw cookies for a cat themed birthday party and they were everybody’s absolute favour and gone in no time.

TIPS TO MAKE THE PERFECT CUTE PAW COOKIES
Use a kitchen scale if you can, to weigh your ingredients rather than measuring them in cups. This will ensure accurate ingredients and result in great cookies.
Bring your butter and eggs to room temperature before you start baking. If they are too cold you won’t be able to cream them sufficiently and will end up with dense cookies.
Try to pipe your cookies evenly and roughly the same size to ensure the same baking time.
Let your cookies cool down completely before decorating them.
A little bit of freeze-dried beet powder goes a long way, just add in a little bit and adjust if needed for a deeper hue of pink.
You can store your cookies in an airtight container or cookie tin for up to 3 weeks.
INGREDIENTS
Flour - use all-purpose or white spelt flour for this recipe.
Butter - make sure to use unsalted butter for these cookies.
Sugar - I recommend using granulated or raw sugar for this recipe.
Eggs - use medium sized egg yolks to make the cute paw cookies.
Marzipan - if you can’t find any marzipan in your store, you can easily make your own by following my HOMEMADE MARZIPAN FROM SCRATCH recipe.
Orange - you will need the juice of half a medium orange to make this cookie dough.
Chocolate - you can use white, milk, or dark chocolate or a mix of all of them to dip your cookies in.
Freeze -dried beet powder - just a tiny bit will go a long way to dye your white chocolate for the paw prints. Alternatively, you can use some red food colouring to dye the white chocolate or get pink chocolate chips instead.

MATERIALS
hand or stand mixer
spatula
piping bags
large plain round tip
small plain round tip
baking sheet
parchment paper
wire drying rack
double boiler or microwave
small bowls
INSTRUCTIONS STEP BY STEP
Line a baking sheet with parchment paper and set aside.
Preheat the oven to 375°F (190°C).
In the bowl of a stand mixer fitted with the paddle attachment or with a hand mixer, add butter and sugar and cream until light and fluffy approximately 3-4 minutes on medium speed. If you use a stand mixer, make sure to scrape down the sides halfway in between.
Add the egg yolks one at a time. Beat on medium to high speed in between until they’re incorporated nicely.
Add in the marzipan and the fresh juice of half an orange. Beat until completely combined. If your marzipan is a bit hard and doesn’t mix in well, you can use a hand blender to break it up.
Add in the flour on low to medium speed until you have a nice and smooth dough.
Fit your piping bag with a large plain round tip, fill it with the dough and pipe paw shapes (aim for 2 inches long) onto your prepared baking sheet. Pipe as smooth as you can and gently flatten any tips with a dampened finger.
Bake for 12 minutes or until golden.
Allow cookies to cool down for 5 minutes before you transfer them to a wire rack to let them cool down completely.
Melt your chocolate in a double boiler or microwave and keep it in separate bowls.
Dip a quarter of your cookies into the melted chocolate and set onto parchment paper. Make sure to keep some of the white chocolate for later.
Dye the melted white chocolate light pink with a pinch of freeze-dried beet powder or red food colouring.
To make the paw design, fill a small piping bag with the pink chocolate and drip a paw print onto the chocolate part.
Let them dry completely before serving or enjoying them!

260 g all-purpose flour
200 g unsalted butter, room temp.
100 g granulated sugar

½ orange
