ICED LEMON BALM LEMONADE WITH HONEY AND GINGER RECIPE

My lemon balm is exploding and I’m loving it! There’s nothing more relaxing than taking a couple of mindful minutes in your garden, being in awe of nature and smelling the scent of lemon balm on your fingers by rubbing them slightly over some fresh leaves. I’ve been adding fresh lemon balm- a mild and refreshing lemon-scented and slightly minty herb, into my teas, salads, pesto and drinks for a while and want to share my favourite early summer drink with you.

This refreshing and delicious iced and blended lemonade is filled with all the green goodness of lemon balm, the bright juice of lemons, the sweetness of raw honey and the slight spice of freshly grated ginger. It will lift your spirits, give you a boost of energy and cool you down on a hot day.

Iced lemon balm lemonade is not only delicious but also packed with nutrients and health benefits. Lemon balm can help to improve your mood, reduce stress symptoms and can help you sleep better. It also aids with digestive issues like bloating and indigestion and supports liver function. Lemon juice, ginger and raw honey are a great addition to boost your immune system, reduce inflammation and help with your digestion as well while giving you an extra boost of vitamin C, antioxidants and enzymes.

Make this thick, frothy and refreshing lemon balm lemonade in only a couple of minutes in a high-speed blender with some fresh lemon balm leaves and enjoy this ice-cold drink immediately!

TIPS TO MAKE THE PERFECT ICED LEMON BALM LEMONADE WITH HONEY AND GINGER

Make sure your lemons and water are nice and cold/ from the fridge, especially on a hot day.

Blend ingredients first before you add in the ice and blend/crush it to get that slushy texture.

You can even spike this lemonade with vodka or gin if you’d like.

Use some extra leaves of lemon balm or lemon peel to decorate your refreshing drink.

Serve immediately for the freshest and frothiest experience.

INGREDIENTS

Lemon balm - use fresh instead of dried lemon balm for this lemonade. Dried lemon balm is better for a steeped and chilled iced tea. If you don’t have lemon balm you can substitute with fresh mint for this recipe.

Lemons - get smaller, thin-skinned lemons with a high juice content which will give this lemonade its refreshing and bright flavour by adding extra acidity.

Ginger - use it freshly grated to add a slightly spicy note to this lemonade.

Honey - sweetens and balances this lemonade beautifully. I use a high-quality raw honey for this recipe. You can use sugar instead of honey for a more neutral flavour. I would recommend making a simple syrup by using equal parts sugar and boiling water and cooling it before adding it into the lemonade.

Water - you can use flat or sparkling water for this recipe. I prefer using flat, filtered water.

MATERIALS

lemon squeezer

fine stainless-steel grater
high-speed blender

INSTRUCTIONS STEP BY STEP

Wash your lemon balm and take the leaves of the big stems, small ones are fine.

Peel and grate the ginger.

Half and squeeze your lemons.

In your blender add lemon balm, water, lemon juice, honey and ginger and blend until smooth.

Add in ice and blend on low to break up the ice first, then increase the speed to medium-high speed until it’s nice and slushy.

Pour into a pitcher or glasses, serve immediately and enjoy this delicious and refreshing lemon balm lemonade!

PREP - 15 minutes‍ ‍YIELD - 4 cups

INGREDIENTS

10g/ 1/2 cup fresh lemon balm
2 lemons
250 ml/ 1cup water
1-2 tbsps freshly grated ginger
4 tbsps honey
250g/ 4 cups ice cubes

INSTRUCTIONS

  1. Wash your lemon balm and take the leaves of the big stems, small ones are fine.

  2. Peel and grate the ginger.

  3. Half and squeeze your lemons.

  4. In your blender add lemon balm, water, lemon juice, honey and ginger and blend until smooth for 30 seconds.

  5. Add in ice and blend on low to break up the ice, then increase the speed to medium for 1-2 minutes until it’s nice and slushy.

  6. Pour into a pitcher or glasses, serve immediately and enjoy this delicious and refreshing lemon balm lemonade!
